Marne Valley
Jerome, the fourth generation of Bourgeois-Diaz, creates champagne in Crouttes-sur-Marne on 7 hectares of vineyards. Adhering to biodynamic principles, he has transformed the vineyard into a garden where 35-year-old vines grow together with wild plants. In the cellar, Jerome uses the traditional but very laborious Coquard Champagne press, necessary for the most delicate extraction of the best portion of grape juice. A love of experimentation has led Jerome to use different containers: stainless steel, oak barrels, concrete eggs and sandstone amphorae. Since 2016, he has been assisted by his wife Charlotte, who monitors the quality and makes her own adjustments. The result is complex, fresh wines full of energy.
Vinification in steel and barrels. Aging for 48 months.
Philosophy: listen to the rhythms of nature to convey the voice of the terroir.
Full-bodied, straight, deep and very complex, due to the longer aging in bottles. A vintage cuvée of great aromatic complexity and beauty.
