Having bought the domain from his parents, Fabien became a 6th generation vigneron. After studying in Bordeaux, since 2006 he has been creating wines on the highest slopes of the Cahors hills. At such altitudes, the nights are cooler, which ensures the characteristic freshness and liveliness of Fabien’s wines. The location of 20 hectares of vineyards at the intersection of 2 different terroirs allows him to fully reveal the versatility of the Malbec variety, as well as Jurançon Noir, Gamay and Chenin. As in Burgundy, he pays special attention to the soil and the manifestation of its characteristics in the wine. The transition to biodynamics only confirmed the chosen path of respect for people and nature. Each cuvée is a separate vineyard and a separate story.

Top of the hill, height 350 meters, the best areas with ferruginous limestone soil. The harvest is harvested from the best areas with calcareous-clay soils. Vinification takes place in ferruginous limestone amphorae with a volume of 800 liters. The combs are removed, aging in vats lasts for 30 days. Aging in 800-liter amphorae for 9 months.

The cuvée is part of the VINS DE TERROIR line, the purpose of which is to create a “Burgundian” attention to the terroir for its most complete disclosure.

The aroma is filled with notes of violet, blackcurrant, cedar and undergrowth with hints of pepper. In the taste, this bouquet is complemented by plum, blueberry accompanied by delicate tannins with an exquisite aftertaste. The pinnacle of elegance and sophistication of Fabien’s wines.
